This is a healthy asparagus and prosciutto and oh so Italian veggie dish that is perfect for everything from Sunday brunch to elegant dinner parties.

Asparagus in Prosciutto Recipe

This recipe is easy to prepare and dresses any table in an elegant way. Be sure to snap off the tough ends of the asparagus.

Italian Lesson - Dov'è il bagno = Where is the bathroom


  • 1 Pound Asparagus, stiff ends removed (break them off)
  • *16 slices slightly thicker cut Prosciutto
  • *Quality Parmesan Cheese, taken out of refrigerator about 30 minutes prior to soften
  • *1-2 Tblsp. Olive Oil
  • * Drizzle quality balsamic
  • Kosher Salt
  • Fresh Black Pepper


  1. Preheat oven to 400 degrees
  2. Wash and prepare asparagus by snapping off the tough ends
  3. Arrange in single layer on cookie sheet
  4. Drizzle with Olive Oil, salt and pepper
  5. Roast in oven until 1/2 cooked
  6. Remove and let cook slightly
  7. Wrap each asparagus in the prosciutto angling it so it covers the spear as you roll it. Leave tip exposed. If asparagus is thin, use several spears and wrap as a bundle
  8. Place back in oven for approx 5 minutes, until prosciutto just starts to crisp
  9. Remove from oven and let cool slightly
  10. Peel a few parmesan curls over the prosciutto and drizzle with good balsamic.
