This delicious and fruity concoction will instantly take you away to the summer days of Italy. This peachy version of a Champagne Cocktail makes a great brunch cocktail or a perfect drink sitting by the pool. A little history on the famed cocktail; it was created in the 1930’s or 40’s at Harry’s Bar in Venice, Italy by bartender Giuseppe Cipriani and was named after a favorite painter, Giovanni Bellini. Originally, the Bellini was intended to use sparkling Italian wine and is still made that way in Italy, elsewhere it is often made with Champagne.

Italian Lesson: Buon Giorno = Good Day

Ingredients

  • 1 Bottle Chilled Champagne or Prosecco
  • 2 Ounces Peach Juice or Peach Puree
  • Peach Puree
  • 2 ripe peaches, seeded and diced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar

Instructions

  1. Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth.
  2. Press the mixture through a sieve and discard the peach solids in the sieve.
  3. Place 2 tablespoons of the peach puree into each Champagne glass and fill with chilled prosecco. Serve immediately.
