We can’t think of a better time to honor the World Cup players with a winning recipe worthy of a celebration; we present our simple yet elegant version of Brazilian Octopus in Garlic Sauce. Add the following ingredients to any pasta for a winning dish.
Keep a can of octopus around for a quick meal that will impress even the most discerning taste buds. The dish provides a balance of texture and blend of flavors. Pair this dish with a refreshing craft beer or a nice pinot grigio.
6 oz can of octopus
two handfuls of fresh leaf spinach
2 roasted peppers, chopped
2 tablespoons chopped garlic
1/4 teaspoon hot red pepper minced
3 tablespoons olive oil
1/4 cup chopped fresh flat-leaf parsley
Shredded Parmesan Cheese to taste
Boil Water for the pasta.
Add the pasta to boiling water and cook until al dente, about 5-6 minutes
Heat the olive oil
Add the octopus and saute
Stir in the garlic to coat the octopus
Add the hot red pepper diced
Add the extra oil from the octopus can
Fold in the spinach and roasted red peppers
Optional add 1/4 cup white wine and allow flavors to blend.
