Chicken Chili That


  • 1 roast chicken carcass plus 1 cup of breast meat, cubed
  • 28 ounce(s) crushed tomatoes
  • 15 ounce(s) petite cut canned tomatoes
  • 3 clove(s) garlic
  • 1 red onion, chopped
  • 2 orange or yellow peppers, chopped medium
  • 1/2 teaspoon(s) ground cumin
  • 1/4 teaspoon(s) freshly ground pepper
  • 6 tablespoon(s) chili powder
  • 14 ounce(s) canned low sodium chicken broth
  • 1 teaspoon(s) dried oregano
  • 15 ounce(s) canned black beans
  • 28 ounce(s) northern beans
  • 1 lime for juicing into chili
  • 3 tablespoon(s) cilantro, fresh 1 large dried chile, floated in crockpot
  • 2 chipotles, canned in Adobo sauce
  • 1 teaspoon(s) chipotle hot sauce, or your favorite hot sauce
  • 1/2 teaspoon(s) cayenne pepper...or less to taste 3 medium carrots, chopped 1 teaspoon(s) kosher salt to taste


  1. place carcass only (not chicken breast meat) in crockpot with broth
  2. add chopped onion, pepper, carrots and spices
  3. cook five hours on low
  4. add chopped breast meat, fresh cilantro, juice of 1 lime, heat for another 10 minutes
  5. step 4 must be done just before serving
  6. this chili gets better with time, you may wish to make it a day ahead


This recipe for a healthy southwest chicken chili will warm you on the coldest days and saves a ton of calories. It will have you saying OMG, this tastes great!. Done in the crockpot, it's also a great timesaver.
