Clothbound Cheddar Fritters

This Clothbound Cheddar Fritters recipe was created in a farm to table region of the United States.  Burlington, Vermont is home to two thirds of the population of the state and some say they started that movement more than 15 years ago. Well known for their fresh cheese production, this chef was obviously drawn to the sharpness that comes with clothbound cheddar, which some compare to parmesan cheese. I was privileged to spend some time recently with Chef Doug Paine who heartily embraces the fresh and healthy lifestyle so apparent throughout the state. Executive Chef Paine has developed an amazing menu at Bleu Northeast Seafood located in the Marriott Courtyard in Burlington Vermont. He also oversees the menu offerings at Juniper, located in Hotel Vermont. All he has to do is look out the window for his inspiration for fresh seafood as his location overlooks Lake Champlain.

Clothbound Cheddar Fritters

Prep Time: 5 minutes

Cook Time: 10 minutes


  • 1 1/4# Cabot Cloth Bound Cheddar
  • 1 1/2 cups Organic AP flour
  • 1/2 tsp fresh ground black pepper
  • 4 eggs
  • 1 tsp. baking powder
  • 1 cup buttermilk
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. old bay seasoning
  • 2 Tbls. fresh chopped herbs (parsley, thyme, rosemary, sage)


  1. 4 cups oil for frying (we use rice bran oil but grape seed or vegetable oil will work) heated to 350 degrees.
  2. Mix all ingredients until well combined
  3. Fry in hot oil until golden brown remove from oil and place on a paper towel to drain
  4. Toss with salt and serve with compote or jam (or just about any kind of dipping sauce will be good)
