Jalapeno Corn Muffins with Agave Butter

Jalapeno Corn Muffins with Agave Butter

These were a huge hit when paired with Chili. I shamely snuck a few to eat on their own. The agave butter totally takes this to the next level.

Ingredients

  • 16 ozs muffin mix (jiffy corn)
  • 2 eggs
  • 2/3 cup milk
  • 8 ozs creamed corn
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter, melted
  • 1 jalapeno, finely diced
  • *Agave Butter
  • 1 stick butter softened and whipped
  • 4 tsp Agave
  • Combine and whip at high with mixer
  • Use as spread

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine cornbread mix, egg and butter in a mixing bowl.
  3. Add remaining ingredients. Combine well. Mixture will be thick and lumpy.
  4. Place cornbread in a greased muffin tin, mini muffin tin or 2-quart casserole dish.
  5. Bake at 375 degrees for 15-20 minutes or until cornbread is golden brown.
