Kangaroo Jerk Chips

This Kangaroo Jerk Chips recipe was inspired by a quaint place I found in St. Augustine, FL called Olde Town Jerky. They have  every kind of jerky you can imagine including alligator, buffalo, venison and elk. The kangaroo jerky presents with subtle overtones of spice. We tried several and it was by far one of the more subtle and soft jerky’s in the place. You can find the kangaroo jerky at http://oldetownjerky.com

So the next question is, what do we do with it? I found when experimenting with it that when it is cut in small strips it become more pliable and allowed me to get creative with possibilities.

All you need is a few ingredients

Kangaroo Jerk Chips

You have to try making this at least once. It's surprisingly tasty. Next up to try...rattlesnake. Stay tuned.


  • Kangaroo Jerky cut into small strips
  • Ripe tomato, diced
  • Chive
  • Salt
  • Pepper
  • Tortilla Chips


  1. Cut the jerky into small strips
  2. Dice the tomato and remove seeds
  3. Toss the tomato with salt and pepper in a colander and let sit for 10 minutes to absorb the spices
  4. Mix in the finely chopped chives with the diced tomatoes
  5. Place the tomato mixture on a tortilla chip and top with the kangaroo jerky strips
