Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
This fantastic and easy recipe highlights seasonal fruit at its peak. Caramelizing the fruit on the grill intensifies its flavor. Soak up the sweet juices with the honey marscarpone bruschetta served alongside.
4 Ripe Peaches
1/4 cup sugar
2 tablespoons fresh lemon juice
1 1/2 teaspoons finely grated lemon zest
1 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
1-inch-thick slices of Italian Bread
1 cup mascarpone
2 tablespoons honey
Put the sugar and lavender in a spice grinder and grind to a powder.
In a large bowl, combine the lavender sugar with the peaches, lemon juice and 1 tablespoon of the olive oil.
Toss well and season lightly with salt and pepper.
Let stand for 10 minutes.
Meanwhile, in a small bowl, stir the mascarpone with the honey and season with pepper.
Light a grill.
Grill the bread over high heat until lightly charred and crisp, about 30 seconds per side.
Spread the honey mascarpone on the grilled bread.
Grill the peaches, cut side down. Watch carefully. In about 8 minutes, they will become soft and juicy.
Turn peaches over and continue grilling.
Remove from grill after about 12 minutes. Softer peaches take less time to cook.
