Mahi in Dragon Fruit Recipe

Mahi in Dragon Fruit Recipe

This recipe is for a single serving.

Ingredients

  • Fresh Mahi
  • Dragon Fruit
  • 2 Tblsp good balsamic
  • 1 Tsp lemon vinegar (or apple cider vinegar)
  • 1/2 orange cut into bite size pieces
  • 6 ounces guava nectar
  • 1/8 Tsp cayenne pepper
  • 1/4 Cup good olive oil to sear fish

Instructions

  1. Simmer the guava nectar, lemon vinegar, cayenne and balsamic together for 25 minutes or until reduced. Keep warm.
  2. Cut the Dragon Fruit in half lengthwise. In one half scoop out fruit in large chunks. The other half Slice about 1/4 inch to create 1/2 moons. Slice the oranges to create 1/2 moon slices as well
  3. Sear the fish 3-4 minutes in olive oil in a very hot, teflon pan. Remove and let cool slightly
  4. Put the Guava Pepper sauce in the middle of the plate.
  5. Place the seared fish on the Guava Pepper reduction
  6. A Second Serving Option
  7. Cut the orange and dragon fruit into bite size pieces
  8. Cut the fish into bite sized pieces and mix with the orange and dragon fruit
  9. Place the fish mixture into the scooped out dragon fruit
  10. Drizzle the Guava Pepper Reduction over the top
  11. Enjoy
