Mahi in Dragon Fruit Recipe


This easy recipe is prepared in under 30 minutes and is pretty enough to be the main attraction at your next dinner party or a simple light and healthy meal. Find all of the steps here.
Mahi in Dragon Fruit Recipe
This recipe is for a single serving.
Ingredients
- Fresh Mahi
- Dragon Fruit
- 2 Tblsp good balsamic
- 1 Tsp lemon vinegar (or apple cider vinegar)
- 1/2 orange cut into bite size pieces
- 6 ounces guava nectar
- 1/8 Tsp cayenne pepper
- 1/4 Cup good olive oil to sear fish
Instructions
- Simmer the guava nectar, lemon vinegar, cayenne and balsamic together for 25 minutes or until reduced. Keep warm.
- Cut the Dragon Fruit in half lengthwise. In one half scoop out fruit in large chunks. The other half Slice about 1/4 inch to create 1/2 moons. Slice the oranges to create 1/2 moon slices as well
- Sear the fish 3-4 minutes in olive oil in a very hot, teflon pan. Remove and let cool slightly
- Put the Guava Pepper sauce in the middle of the plate.
- Place the seared fish on the Guava Pepper reduction
- Cut the orange and dragon fruit into bite size pieces
- Cut the fish into bite sized pieces and mix with the orange and dragon fruit
- Place the fish mixture into the scooped out dragon fruit
- Drizzle the Guava Pepper Reduction over the top
- Enjoy
