Pasta Tuscany

This was a tasty recipe that will surely be made many times over.

Ingredients

  • 12 ounce(s) Rigatoni or your favorite pasta, cooked al dente and drained
  • 2 tablespoon(s) extra virgin olive oil
  • 28 ounce(s) crushed tomaotes
  • 1 clove(s) garlic, chopped
  • 1 onion, chopped small
  • 1 carrot, chopped small
  • 1 red pepper, cut into large chunks
  • fresh basil leaves for garnish
  • Parmigiano-Reggiano shaved from a wedge salt and pepper to taste
  • 1/2 teaspoon(s) crushed red pepper

Instructions

  1. Saute the onion, carrot and red bell pepper in the olive oil until softened, about 6-7 minutes
  2. add the chopped garlic and saute
  3. add the crushed tomatoes and simmer 15 minutes
  4. add the cooked pasta and stir
  5. salt and pepper to taste
  6. add crushed red pepper and stir$
  7. garnish with basil leaves and parm cheese
