The following video gives you a great start on how to make the fluffiest banana pancakes.

 

Before flipping about 1/2 way through cooking the first side of the pancake just before it starts to bubble, put slices of banana about 1/4″ thick. Flip the pancake when it starts to bubble. The bananas gain a sweet, caramel existence when you lay the bananas on them instead of mixing them into the batter. Don’t wait for a rainy day for these banana pancake beauties.
