Saltwater Cafe Amberjack Recipe

I've re-created this dish many comes out perfect every time. Definitely a keeper.


  • 2 8oz Fresh Amberjack Steaks
  • 4oz White Lump Crab Meat crumbled
  • 4oz Kielbasa Sausage sliced
  • 1 Bell Pepper sliced
  • 1 Jalapeno Pepper sliced
  • 2 Garlic Cloves chopped
  • ½ Spanish Onion diced
  • 2oz Shiitake Mushrooms sliced
  • 1 Scallion diced
  • 1oz Butter


  1. Sautee all ingredients other than amberjack in butter for about 3 minutes over medium
  2. heat.
  3. Use blackening seasoning to taste.
  4. Grill amberjack for about 3 minutes each side over medium heat.
  5. Use fresh fish seasoning to taste.
  6. Plate fish, top with crab and sausage mixture and top with Béarnaise sauce.
  7. Garnish with fresh steamed asparagus.
