Want to make a great tasting slow cooker beef stew recipe?

This Slow Cooker Beef Stew recipe has been in my family for decades. It tastes great without the mashed potatoes but somehow feels more comfortable with them. I can’t explain it.

Slow Cooker Beef Stew

This is a five star recipe that is easy enough for a novice cook and hearty enough for even the most picky beef stew aficionados.


  • 3 Lbs Beef Stew Meat, cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 3 carrots, quartered
  • 3 celery ribs, cut into large pieces
  • 3/4 Lb of fresh green beans, cut into thirds
  • 2 medium onions, quartered
  • 3 Potatoes, peeled, cut into large chunks
  • 4 Potatoes, Peeled-cook for mashed potatoes
  • 3 tablespoons tomato paste
  • 1 Turkish bay leaves
  • 2 thyme sprigs
  • 10 dashes Worcestershire Sauce
  • 3 cups reduced-sodium beef broth
  • 3 cups water
  • 3-4 tblsp water mixed with flour to
  • create a thin paste
  • Kosher salt/fresh cracked pepper to taste


  1. Pat beef dry and season with salt and 1 teaspoon pepper
  2. Heat oil in pot over medium-high heat until it shimmers
  3. Brown meat, without crowding, in 3 batches, about 8 minutes per batch
  4. Transfer to a platter
  5. Reduce heat to medium, add carrots, celery, onions. green beans and cook,
  6. stirring until browned, about 12 minutes. Stir in tomato paste and thyme
  7. Transfer meat and vegetables to a crock pot. Add broth, water, bay leaf
  8. and Worcestershire Sauce. Cook on low for 7-8 hours
  9. Add the flour/water to thicken. Add Salt/Pepper to taste
  10. Enjoy over mashed potatoes
