This is a simple swordfish recipe that is low on calories and high on taste.
Recipe Type: Seafood
3 tablespoons extra virgin olive oil
2 cloves garlic, thinly sliced
2 bunches Italian parsley, finely chopped
2 tablespoons freshly ground black pepper
1 pound center cut swordfish, sliced into 4-ounce pieces ¼-inch thick
1 tablespoon hot chili flakes
½ cup dry white wine
6 oz fresh spinach steamed and water squeezed out
3 strips cooked bacon cut into large crumbles
Preheat grill or oven to 450 degrees F.
In a 12 inch saute pan, heat oil until smoking. Add garlic and cook until lightly golden brown, about 30 seconds. Remove from heat, stir in parsley flakes and black pepper and allow to cool. Steam fresh spinach or cook in microwave about 90 seconds. Squeeze out water and chop. Sprinkle with 1 tsp fresh lemon juice.
In a 12 to 14-inch oven proof saute pan, heat butter, chili flakes and wine until boiling.
Lightly brush swordfish with olive oil and dust with salt and pepper.
Saute in pan lightly and move pan to oven. Keep in oven until cooked through, about six to eight minutes.
Remove from oven and cover with spinach and crumbled bacon. Kick it up with gorgonzola sprinkles on top.
This recipe is just as delicious cooking the swordfish on the grill…about 6 mins each side on a well oiled grill.
