Another great recipe from the folks at Barilla. Slightly modified from their famous book Italian Cuisine Signature Recipes, this easy dish is a winner, and low calorie too.


Vegetable Caponata – Caponata Di Verdure

Vegetable Caponata – Caponata Di Verdure

I served this recipe alongside a rotisserie pork loin and steamed asparagus. What a hit


  • 6 3/4 teaspoon(s) extra virgin olive oil
  • 1 eggplant, peeled and diced
  • 2 medium zucchini
  • 3 celery spears, cut into small dice
  • 2 medium onion black olives, pitted (handful)
  • 3/4 ounce(s) salt-packed capers
  • 1/2 ounce(s) pine nuts, toasted (optional)
  • 1/2 ounce(s) pistachio nuts (optional)
  • 1/2 ounce(s) golden raisins
  • 1 1/2 cup(s) tomato puree
  • 1 bunch(es) fresh basil, chopped
  • 1 teaspoon(s) white vinegar
  • 1 tablespoon(s) sugar
  • salt and pepper to taste


  1. take the prepared eggplant and set colander after sprinkling with salt.
  2. let sit for 20 minutes to remove bitterness
  3. fry the eggplant in 2/3 of the olive oil
  4. Dice the onion and celery finely after cleaning and washing
  5. saute in the remaining oil until tender, about five minutes
  6. add the cleaned, washed, dried and diced zucchini to the onions and celery
  7. add the raisins, capers, pine nuts and black olives
  8. add the tomato puree and fried eggplant season the mixture with salt and pepper and simmer for a few minutes
  9. add the vinegar and sugar and work in to the mixture
  10. add the pistachios and chopped basil
