Caprese Salad

This recipe was taken from the Barilla Cookbook Italian Cuisine, Inspired Recipes. A visit to Academia Barilla Cooking School in Parma, Italy will have you wanting to cook Italian recipes everyday.

A little history on this popular starter. Known as salad in the style of Capri is a simple salad, made of sliced fresh mozzarella, tomatoes and basil, seasoned with salt, and olive oil. In Italy, unlike most salads, it is usually served as an antipasto (starter), not a contorno (side dish).

  • 4 Ripe Beefsteak Tomatoes
  • 8 3/4 ounce(s) Fresh Mozzarella, preferably Buffalo
  • 2 tablespoon(s) Good quality extra virgin olive oil
  • 1 tablespoon(s) Quality Aged Balsamic
  • Kosher salt and fresh ground pepper to taste
  • Handful Fresh basil


  1. wash and dry the tomatoes
  2. cut mozzarella and tomatoes into regular slices and season with some salt
  3. wash and pat dry the basil leaves
  4. arrange the tomato and mozzarella on individual plates
  5. drizzle olive oil and balsamic vinegar lightly,
  6. sprinkle with salt and pepper
  7. Serve
