Eggplant Rollatini and Beautiful Italy

Eggplant Rollatini and Beautiful Italy

This dish can be doubled and served as a main dish or used as is for a party appetizer. Everyone will want the recipe. Destination Cuisine: Destination Cuisine Recipe Type: Appetizer


  • 1 medium eggplant, sliced ¼ inch
  • 2 Tblsp. kosher salt
  • 2 eggs
  • 2 cups Italian bread crumbs
  • thin slices mozzarella cheese
  • thin slices prosciutto or anchovy filets
  • sun-dried tomatoes packed in oil
  • oil for frying


  1. after peeling, cut eggplant into ¼ inch slices lengthwise
  2. place in a colander with salt sprinkled between the layers
  3. sit a heavy dish on top of the eggplant and leave it to drain about one hour
  4. rinse and pat slices dry
  5. preheat the oven to 375 degrees
  6. Heat oil to 375 degrees
  7. dip each slice first into the beaten egg, then into the bread crumbs
  8. fry the eggplant slices until golden brown
  9. drain on paper towels
  10. Slice the sun-dried tomatoes into long slivers
  11. Lay out each slice and place a couple of sun-dried tomato slivers
  12. Place a layer of prosciutto or anchovy filet
  13. top with a mozzarella slice
  14. roll up the eggplant lengthwise and secure with a toothpick
  15. after rolling all the eggplant, place on a slightly oiled baking sheet
  16. top with your favorite, most expensive jar sauce and shredded mozzarella
  17. bake 7-10 minutes or until hot
  18. Serve as is or with pasta sauce
  19. Mangiare con chi ami. (Eat with those you love) Buon Appetito!


This is a recipe to eat with your eyes first as it comes out as a beautiful presentation from the oven. You will find this dish all over Italy if you ever travel there.
